I’m going to be honest with you… I love eating, especially sweets.
Loving treats is difficult for me because my body is super sensitive to sugar. I get shaky quickly and end up in a bad mood if I have too much sugar. It’s like an extreme version of hangry. I like a quick bite before I go to bed, but I always struggled to find a really good snack with limited sugar. Hopefully I am saving you hours of trying different sugar-free cookies, candies, ice creams, or cakes. Trust me, I have tried so many recipes, but the one I am about to share with you will blow your mind (and mouth)!
Thank you Sally’s Baking Addiction for these amazing no-bake coconut granola bars! You might be thinking “What?! Granola bars for dessert? Gross…” but they are delicious. I call them homemade Samoas (like the Girl Scout Cookies), even though they taste better than the actual cookie!
I like to substitute flax seeds or chia seeds for the almond flour. Also, mixing in just a few chocolate chips adds the perfect amount of sweetness to create the best dessert ever.
I highly suggest trying these cookies (or granola bars). I make a batch every weekend to last me through the week, and they only take 15 minutes to make (no joke). Three of these cookies (or like 100… so addicting) are a great healthy dessert! Let me know if you try them and what you think!
